The wines follow the same rigorous guidelines as all of the projects Salvo consults on: organic fruit, alberello trained vines, and a very light touch in the cellar to showcase the terroir first and foremost. Aedes is from young vines in the Mognazzi contrada, a field blend of approximately 70% Carricante, 20% Catarratto, and 10% Grecanico and Minella. Most of the
