Their vineyards, some over 60 years old, are planted on steep, southeast slopes in the bottom flank of the valley, facing the Alps. Mondeuse is the type of variety that communicates the process quite clearly, and so partial destemming plus fermentations at cool temperatures ensure freshness and clarity here. The wine is
